About Us

Our story begins with a three-generations-old handwritten recipe, jotted down on some plain scrap paper sometime after WWII. This simple bread and butter recipe is what inspired the first ever batch of what would become Billy's Dillies, while simultaneously spawning a passion to explore the limitless possibilities of pickling. Now with 12 varieties (and counting), Billy's Dillies continues to push the boundaries of pickling while carefully maintaining balance between innovation and tradition; not afraid to explore but never abandoning the tried-and-true homestead methods passed on and preserved throughout the generations. Tradition is where we come from and what we represent, and the future is where we are destined.
